Easy, No Fuss Sheet Pan Kielbasa Sausage and Vegetables – If you need an easy weeknight dinner, this recipe is for you! This sheet pan kielbasa and vegetable recipe has minimal prep time and cooks in less than 45 minutes. This recipe includes pre-cooked kielbasa sausage, fresh vegetables, and kitchen stock ingredients. It is a great option if you need something quick for dinner. It’s also low-cost.

Sheet pan dinners are fast, convenient and can usually be very low-cost because they use mostly meat and vegetables.
I’ll be honest, I’m not a fan of all sheet pan dinners for two reasons. All sheet pan dinners are not created equal. First, it depends on the meat you use. Chicken breasts can become dry fast on a sheet pan if you do not sear them beforehand. However, meat with higher fat content, like kielbasa, does great on a sheet pan. I highly recommend cooking kielbasa on a sheet pan.
Second, you have to pick vegetables that will have enough time to cook thoroughly. If you use potatoes with sheet pan dinners, be sure to cut them into small pieces. Large pieces will take much longer to cook than any meat you put on the pan. This will leave the potatoes undercooked or the meat overcooked.
But don’t let those things worry you because I have a recipe that works every time!
This recipe is not only cooked to perfection but the meat and vegetables work beautifully together. The kielbasa on top of the vegetables allows all those flavors of the kielbasa to melt down into the vegetables during the cooking process, making every bite delicious.
Saving Money with Sheet Pan Kielbasa and Vegetables
Kielbasa goes on sale all the time. You can use whichever flavor you prefer. I usually buy the smoked Turkey. Zucchini, yellow squash and tomatoes are usually very low cost as well. If the cherry tomatoes happen to be priced too high when you make this recipe, leave them out or add some more squash.
Add some oven baked rice as a filler to make this dinner complete. Rice is part of the kitchen stock list. You can throw it in the oven right next to the sheet pan kielbasa and vegetables. It is such an easy dinner!
Other than the kielbasa and vegetables, the only things you’ll need for this recipe are part of your kitchen stock.
- Sea Salt
- Black Pepper
- Garlic Powder
- Olive Oil
- Grated Parmesan Cheese

How to Make Easy, No Fuss Sheet Pan Kielbasa and Vegetables
- Preheat your oven to 400 degrees and spray a large, rimmed baking sheet with cooking spray.
- Wash your produce.
- Dice your zucchini and squash by trimming the ends from the zucchini and squash, slicing them in half lengthwise, placing each half flat-side down and cut lengthwise into two spears. Cut the spears crosswise into bite-size pieces.
- Place zucchini, yellow squash and tomatoes in a large bowl. Drizzle with olive oil and seasonings. Mix thoroughly.
- Spread out vegetables on the sheet pan.
- Slice kielbasa and place it on top of the vegetables.
- Roast in the oven for 40 minutes.
- Top with grated parmesan cheese and serve over oven baked rice. I included the oven baked rice recipe below, too!
- Start by adding your vegetables with olive oil and seasonings to your sheet pan.
- Next, top with you sliced Kielbasa.
- Roast for 40 minutes at 400 degrees.
- Top with grated parmesan cheese.
Making Kielbasa and Vegetables Ahead of Time and Freezing
Making Ahead: Let the kielbasa and vegetables come to room temperature. Transfer them to an airtight container and store in the refrigerator for up to four days.
Reheat: Reheat kielbasa and vegetables in the oven at 350 for about 10 minutes or in the microwave in 30 second intervals.
Freezing: Allow the kielbasa and vegetables to come to room temperature. Transfer the kielbasa and vegetables to a parchment lined sheet pan in a single layer and freeze for 2 hours. Transfer the kielbasa and vegetables to a freezer safe bag. Squeeze out all of the air from the bag and keep in the freezer for up to three months.
Thawing: Thaw the kielbasa and vegetables in the refrigerator over night and reheat according to directions above.

Oven Baked Rice
Ingredients
- 1 cup White Rice
- 1¾ cups Boiling* Water
- 1 tsp Sea Salt
- 2 tbsp Salted Butter
Instructions
- Preheat oven to 400 degrees.
- Spray a 8×8″ baking dish with cooking spray.
- Add 1 cup of white rice and 1 tsp of sea salt to baking dish. Stir together.
- Divide 2 tbsp of salted butter into 5 pats and spread out on top of the rice.
- Boil 1¾ cups of water and pour over rice. Cover quickly and tightly with aluminum foil.
- Bake in the oven for 20-30 minutes. Until water is absorbed, and rice is cooked and tender.
- Fluff with a fork.
