Easy, No Fuss Sheet Pan Kielbasa and Vegetables
Pre-cooked kielbasa sausage, zucchini, yellow squash and tomatoes work together to make this an easy, go to weeknight dinner. Serve over oven baked rice.

- 1 Kielbasa I use Turkey Sausage
- 2 Zucchini
- 2 Yellow Squash
- 10 oz Cherry Tomatoes
- 2 tbsp Olive Oil
- ½ tsp Sea Salt
- ¼ tsp Garlic Powder
- ½ tsp Black Pepper
- ¼ cup Grated Parmesan Cheese
Preheat your oven to 400 degrees and spray a large rimmed baking sheet with cooking spray.
Wash your produce.
Dice your zucchini and squash by trimming the ends from the zucchini and squash, slicing them in half lengthwise, placing each half flat-side down and cut lengthwise into two spears. Cut the spears crosswise into bite-size pieces.
Place zucchini, yellow squash and tomatoes in a large bowl. Drizzle with olive oil and seasonings. Mix thoroughly.
Spread out vegetables on the sheet pan.
Slice kielbasa and place it on top of the vegetables.
Roast in the oven for 40 minutes.
Top with grated parmesan cheese and serve over oven baked rice.
