Parmesan Green Beans

Fresh green beans are one of my favorite side dishes. I like green beans, but I love the process of snapping fresh green beans the most. Now, my kids don’t like green beans. It doesn’t matter if I cook them in a pound of butter and cheese, green beans are not their thing. (I can usually get them to choke down a couple bites with some reverse psychology, ‘You better not eat any because I don’t want you to get big. You have to stay my baby forever.’) So, with that in mind, I make green beans how I love them, and this is my favorite go to recipe.

There is something soothing about standing at a kitchen counter, sorting through a large bowl of fresh green beans and snapping the ends off that gives me the feeling of nostalgia. A time when things were simpler. I picture a grandma with a kitchen towel on her lap sitting in a rocking chair on the front porch snapping green beans while she patiently listens to someone’s problems and offers select words of wisdom back.

This is a very simple way to prepare fresh green beans. Fresh green beans are available in most grocery store produce departments year-round although peak season is May-September. You may use canned green beans for this recipe as well, just drain them and start on step 3. I cannot say they will taste as good as the fresh green beans but sometimes you have to be flexible with what is available and that is okay.

Saving Money

This recipe is a great low cost side dish option that goes with lots of meals including meatloaf and chicken cordon bleu. The only thing you would be purchasing would be the green beans so long as you have everything from my recommended kitchen stock list.

Parmesan Green Beans

Ingredients

  • 2 lb Fresh Green Beans
  • 1 tbsp EVOO
  • 1 tbsp Salted Butter
  • ¼ tsp Garlic Powder
  • ½ tsp Sea Salt
  • ½ cup Grated Parmesan Cheese

Instructions

  • Wash and snap ends off green beans.
  • Boil green beans in water for 10 minutes. Drain and set aside.
  • Melt EVOO and butter in skillet. Add green beans and sauté.
  • Add garlic powder and salt.
  • Remove from heat and serve warm with parmesan sprinkled on top.
