Quick and Easy Homemade Egg Bites

Save Money with the best quick and easy homemade egg bites. Inspired by Starbuck’s mouth-watering egg bites, these quick and easy homemade egg bites make mornings a breeze. They store beautifully in the fridge and they are also freezer friendly! With only three ingredients they are very kid friendly as well.
Some mornings are just too busy to make breakfast from scratch. These are perfect to have on hand in the fridge or freezer for any mornings whether you’re too busy to make breakfast or just don’t feel like getting out the skillet.
Saving Money with Homemade Egg Bites
These egg bites may take inspiration from Starbuck’s mouth-watering egg bites. However, they will only cost a fraction of what those do.
My recipes only calls for 6 eggs, 3/4 cup of cottage cheese and 1/2 tsp of sea salt (Kitchen Stock Item) and will make 24 mini homemade egg bites or 12 medium sized egg bites.

You can add additional ingredients to these egg bites, but the best thing about this recipe is that they taste amazing without any added ingredients.
- Gruyere and Cooked Bacon
- Scallions and Cheddar
- Feta and Spinach
- Mushroom and Swiss Cheese
How to Make Homemade Egg Bites
You will need a blender, a sheet pan and two 12-count mini muffin tins. I use an aluminum pan for mine because that is what I have. You can also use a silicone pan for these. No matter what pan you use, you will want to grease it thoroughly to ensure the egg bites slide right out after baking.

I use a blender for this recipe to make the texture smooth and velvety. I do not recommend mixing by hand because it will be difficult to get all the lumps out of the cottage cheese. If you have magic mixing powers, go ahead though and teach me your tricks!
I tried many different types of cottage cheese with this recipe and landed on 2% milkfat low-fat, small curd cottage cheese as the very best option. The others had too much moisture causing the tops of the egg bites to bubble and crisp.

You’ll also want to use a sheet pan under the muffin tins so that you can bake these in a water bath. Cooking the eggs at a low temperature with the water bath ensures that smooth velvety texture.

Serving Homemade Egg Bites
When I serve these for breakfast, I give the kids 2-3 each and adults 4-5 if I make them in the mini-muffin tins. If I use a medium sized muffin tin, a good serving size for kids is 1 and adults is 2.
Since these egg bites are full of healthy protein, I enjoy serving these with fresh fruit such as oranges and blueberries and toast on the side to complete the breakfast. When introducing kids to new flavors, one idea is to also serve the optional added ingredients on the side of the egg bites rather than in them. This way, adults can take a bite of the egg bite and ingredients at the same time and still get the flavors and kids can try them separately. My personal recommendation would be some sauteed spinach on the side. My kids love it when I sauté the spinach in butter.


Making Homemade Egg Bites in Advance and Freezing.
Now, if you’ve followed my blog for a while, you know I am NOT a morning person. I struggle to put together a breakfast for hungry kids in the morning. It’s even harder when I haven’t had my coffee. But making these egg bites ahead of time is so easy!
Making Ahead: Once the egg bites have cooled, you can store them in an airtight container in the refrigerator for up to 3 days.
Reheat: Reheat the egg bites in the microwave for 20-30 seconds.
Freezing To freeze the egg bites, allow them first to cool completely in the fridge. Once they are cooled, add them to a freezer friendly zip lock bag.
Thawing Remove the desired amount of egg bites from the freezer and place them in the fridge overnight. Reheat them in the microwave for 20-30 seconds the next morning.

Homemade Egg Bites
Equipment
- 1 Sheet Pan
- 2 Mini Muffin Tins
- 1 Blender
Ingredients
- 6 Eggs
- ¾ cup Cottage Cheese 2% Milkfat, Low-Fat & Small Curd
- ½ tsp Sea Salt
- 1 cup water For water bath
Instructions
- Preheat oven to 325 degrees Fahrenheit
- Grease both muffin tins thoroughly with cooking spray. I recommend using original (canola oil) spray. You can also use olive oil but it make the egg bites taste slightly different.
- Place muffin tins on sheet pan.
- In a blender, add 6 eggs, ¾ cup cottage cheese (2% low-fat), ½ tsp sea salt.
- Blend until smooth.
- Pour batter into each muffin tin filling almost to the top.
- Carefully pour water into the sheet pan around muffin tins.
- Bake for 20-25 minutes, until egg batter is set.
- Serve warm or let cool and store in airtight container in fridge for up to 3 days.
