Homemade Egg Bites

2 Mini Muffin Tins
1 Blender
- 6 Eggs
- ¾ cup Cottage Cheese 2% Milkfat, Low-Fat & Small Curd
- ½ tsp Sea Salt
- 1 cup water For water bath
Preheat oven to 325 degrees Fahrenheit
Grease both muffin tins thoroughly with cooking spray. I recommend using original (canola oil) spray. You can also use olive oil but it make the egg bites taste slightly different.
Place muffin tins on sheet pan.
In a blender, add 6 eggs, ¾ cup cottage cheese (2% low-fat), ½ tsp sea salt.
Blend until smooth.
Pour batter into each muffin tin filling almost to the top.
Carefully pour water into the sheet pan around muffin tins.
Bake for 20-25 minutes, until egg batter is set.
Serve warm or let cool and store in airtight container in fridge for up to 3 days.
